Mango Jam Roll Cake or Swiss Roll

Hello friends! I'm back home after a month long break. Thank you so much to all of you for taking time out to visit my blog and for your lovely comments :)

Coming back to the recipe, a Swiss roll or jelly roll is a type of sponge cake roll. The thin cake is made of eggs, flour and sugar and baked in a very shallow rectangular baking tray, called a sheet pan. The cake is removed from the pan and spread with jam or butter-cream, rolled up, and served in circular slices. ( Source : Wikipedia )

Simple, quick and easy to make! The slices of the roll can be served warm, cold or at room temperature with whipped cream. Or enjoy it plain with a cup of tea or coffee!

Mango Jam Roll Cake

Total time : 1 hr 10 min.
Prep. time : 45 min.
Cook time : 10 min.
Serves : 8 to 10

Ingredients:

Cake Roll :
  • 4 eggs, separated
  • 3/4 cup sugar
  • 1 tsp. mango essence
  • 3/4 cup cake flour, sifted
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
Garnish:
  • Confectioners' sugar, for dusting, sifted
  • 1 cup mango jam ( see recipe ), stirred well

Method :
  • Preheat oven to 200 C / 400 F.
  • In a small bowl, beat egg whites until stiff but not dry and set aside. 
  • In another bowl, beat the egg yolks until light. 
  • Gradually add the sugar and mango essence, and mix well. 
  • Sift together the flour, baking powder, and salt. 
  • Add the sifted flour mixture to the egg yolk mixture. 
  • Fold in the egg whites into the egg mixture and pour the batter into a 15 by 10 by 1-inch jelly roll pan lined with waxed paper, gently spreading mixture evenly into corners.. 
  • Bake for 8 to 10 minutes or until the cake is golden and the top of cake feels soft and springy when touched lightly with fingertips.
  • Meanwhile, place a piece of baking paper on board; sprinkle evenly with with confectioners' sugar.
  • When cake is done, loosen edges of cake and immediately turn cake onto paper dusted with confectioners' sugar.
  • Gently but quickly peel wax paper off cake.
  • Working rapidly, use serrated knife to trim 1/4-inch of hard crust off each long side of the jelly roll cake.
  • Begin with the narrow side and using hands, gently roll the cake and paper up together. 
  • Cool cake on a rack, seam side down, for 10 to 15 minutes.
  • Once cake has cooled, gently unroll and spread cake with jam or jelly. 
  • Re-roll and place, seam-side down, on a serving plate.
  • Sprinkle with confectioners' sugar.
  • Serve cake cut into slices.
Note : 
  • I divided all the ingredients in half, used a ( 7 by 10 1/2 ) inch pan.

Perfectly baked Swiss roll ; tell you the truth about my jam rolls the first recipe i tried from net was really a disaster :D it was baked like a greasy rubber :D i had to discard it.. i was about to cry at that time .. then i tried for the next recipe it was much better :D but your Swiss roll turned out too great i am going to follow your recipe :D and you have separated the eggs yolk and white.. i haven't did that before .. shall try yours and tell you :). your jam rolls look so great :P yummy.. pass me .. plus Ambreen you are great chef.. i am learning a lot from you :)
