Quick & Easy Chicken Capsicum Curry ... Pakistani style Chinese recipe!

Chicken With Capsicum Curry

Serves : 4

Ingredients :
  • 1/2 cup oil
  • 1 large onion, finely chopped
  • 1 tbsp.  ginger and garlic paste
  • 500 gm.  chicken, medium sized pieces 
  • 1/2 tsp.  turmeric powder
  • 2 tsp.  red chillies powder

Makes : 24 slices
Ingredients :
  • 1 cup all-purpose flour
  • 1 tsp.  baking powder
  • 1/2 cup butter, softened
  • 1/2 cup castor sugar
  • 3 eggs
  • 1/2 tsp.  vanilla essence
  • Few drops yellow food color, optional 
Method :
    • Preheat oven to 180 C. Grease & line a 10" x 7" baking pan or 7" square pan.
    • Sieve flour and baking powder, keep aside.
    • Beat butter and sugar in a bowl till light and fluffy.
    • Add in eggs, one at a time, beating well after each addition.
    • Beat in vanilla essence and color.
    • Fold in flour mix until well combined.
    • Pour in the prepared pan. Bake at 180 C for 20 - 25 minutes until cooked when tested with a skewer.
    • Remove from the oven and let it cool for 5 minutes. 
    • Now cut the cake in the center and then cut each half of cake in ( 1" ) thick slices.
    • Arrange slices on lined baking tray and bake at 150 C for 15 minutes.
    • Turn the side of cake slices and bake again for 15 minutes until crispy and golden brown.
    • Transfer to a wire rack to cool completely, then store them in an air-tight container.

        Lamingtons


        Lamingtons,very popular in Australia,is a sponge cake in the shape of a cuboid that is dipped in a sweet chocolate icing and then rolled in desiccated coconut.Enjoy as a dessert or serve with morning or afternoon tea.

        Recipe taken from Huletts Sugar

        * Prep. Time : 50 minutes
        * Cook Time : 25 – 30 minutes
        * Makes : 16 squares


         Vanilla Sponge :
        • 2 Large Eggs
        • 1 cup Castor Sugar
        • 1/2 cup Oil
        • 1/2 tsp Vanilla Essence
        • 1 1/2 cup Flour, sifted
        • 1 1/2 tsp Baking Powder
        • 1/2 cup Milk
        Chocolate Coating :
        • 1 cup Sugar
        • 1/2 cup Hot Water
        • 1 1/2 tbsp Cocoa Powder
        • 1/2 tbsp Butter OR Margarine
        • Desiccated Coconut, for coating 
        Vanilla Sponge :
        • Whisk the castor sugar and eggs in a mixer until light and fluffy.
        • Add the oil and vanilla essence, and mix well.
        • Add the sifted flour and baking powder to the mixture alternatively with the milk.
        • Pour the creamed mixture into a greased pan (I used 10" x 7" pan) and bake in a preheated oven at 180°C for 25–30 minutes or until golden brown. 
        • Allow to cool and cut into squares.
        Chocolate Coating :
        • Heat the sugar, cocoa, butter and water until bubbly. 
        • Allow to cool, then dip the sponge squares into the sauce and roll in the coconut. 
          • Place the Lamingtons on a wire rack to dry and then store in an airtight container for several days.

            Regina Cookies (Sesame Biscotti)


            Crispy Italian Cookies...This recipe was posted by FavoriteFixins at GroupRecipes.I used butter instead of shortening. I haven't used milk,because the dough was smooth and soft without it.Also reduced the temperature , as they were browning quickly at the suggested temperature.

            Regina Cookies (Sesame Biscotti)

            * Prep. Time : 20 minutes
            * Cook Time : 16 - 18 minutes
            * Makes : 36 cookies
            • 2 cup all-purpose flour
            • 1/2 cup sugar
            • 3/4 tsp. baking powder
            • 1/8 tsp. salt
            • 1/2 cup butter,chilled, cut in cubes
            • 1 egg, slightly beaten
            • 1/2 tsp. vanilla extract
            • 1/3 cup sesame seeds

            • Sift together flour, sugar, baking powder and salt.
            • Cut in butter until the mixture resembles a coarse cornmeal. 
            • Stir in the slightly beaten egg and vanilla gradually while mixing. Continue to mix until smooth and soft. 
            • Break dough into small pieces and roll each piece between the palms of hands to form 2 inch lengths. 
            • Flatten slightly and roll in sesame seeds. 
            • Place on greased(or lined with paper) cookie sheets about 1/2 inch apart. 

            • Bake at 350 F / 180 C for 18 minutes, or until cookies turn brown. 
            • Remove from oven and let cool on the baking sheet for a minute.
            • Transfer to a wire rack to cool completely ,then store them in an air-tight container.

            Naan Khatai Or Sugar Cookies


            The traditional Pakistani biscuits called as Naan Khatai. Extremely light but sweet and just melts in the mouth. Traditionally made with clarified butter or "ghee", using plain unsalted butter would be just fine.
