Melt In Your Mouth Peanut Butter Cookies


Melt In Your Mouth Peanut Butter Cookies ... These delicate and tender cookies made with peanut butter, will just melt in your mouth.


Melt In Your Mouth Peanut Butter Cookies

Makes : 18 - 20 cookies


Ingredients :
  • 150 gm.  plain flour
  • 75 gm.  icing / confectioner's sugar
  • 100 gm.  smooth / creamy peanut butter
  • 75 gm.  oil, canola or peanut
  • Peanuts, to decorate
  • 1 egg yolk, for wash

    Method :
    • Preheat oven to 150 C. Line the cookie sheet with parchment paper.
    • In a large mixing bowl, combine flour, sugar and peanut butter. Beat on medium speed for a minute.
    • Gradually add oil and and continue to beat for a couple more minutes until the mixture comes together ( Be careful with the addition of oil. If you add all oil at once, the dough might become sticky and difficult to shape. Stop adding the oil as soon as the mixture comes together into a smooth dough ) .
    • Refrigerate the dough for 15 minutes, if it is too soft to be shaped.
    • Roll dough into small round balls ( about 1 tsp.  of dough per ball ). Arrange balls ( about 2 inches apart ) on prepared sheet.
    • Make a small hole or indentation in the center of each ball, using your thumb or a wooden spoon.
    • Press a peanut into the top of each cookie gently, then brush each cookie with egg wash ( the cookies will puff up and crack as they bake, so use egg wash generously ).
    • Bake for ( about 15 - 18 ) minutes until golden.
    • Cool completely on a wire rack and store in an airtight container, up to a month.

    14. These are gorgeous cookies Ambreen! I love the color from the egg wash on top!
      I used to think that Americans were the only ones who liked peanut butter, but whenever we visited our family used to ask that we bring jars of peanut butter for them! I guess it's a universally loved spread :)
