Banana Peanut Chocolate Chip Muffins


Banana Peanut Chocolate Chip Muffins ... Soft and moist muffins with banana, peanuts and chocolate chips.


Banana Peanut Chocolate Chip Muffins

Makes : 12


Ingredients :
  • 1 cup all-purpose flour
  • 3/4 tsp.  baking soda
  • 1/8 tsp.  salt
  • 2 overripe bananas
  • 1/2 cup brown sugar
  • ( 1/4 + 1/8 ) cup or ( 6 tbsp. ) unsalted butter, melted and cooled
  • 1 egg
  • 1/2 tsp.  vanilla extract
  • 1/4 cup peanuts, chopped
  • 1/4 cup chocolate chips 

Method :
  • Preheat the oven to 180 C. Line a muffin tin with paper liners.
  • In a large bowl, combine flour, baking powder and salt. Set aside.
  • Mash 1 banana with a fork in a small bowl until slightly chunky; set aside.
  • In another bowl, beat the remaining banana and brown sugar together for about 3 minutes.
  • Add the melted butter, egg and vanilla; beat well.
  • Fold the wet ingredients together with the dry, with a spatula until just combined. Fold in the mashed banana, peanuts and chocolate chips.
  • Spoon the batter equally into each paper liner. Gently tap the muffin tin on the counter to release any air bubbles.
  • Bake for 16 - 18 minutes or until a toothpick / skewer inserted into the center comes out clean.
  • Stand in the pan for 5 minutes, then transfer to a wire rack to cool.   
  • Serve warm or at room temperature.

  7. I should be able to replicated the recipe, read through and quite easy to make. Love anything made with bananas yet will reduce the amount of chips, not really a big fan of it. Perfectly baked and good for anytime of the day.
