Kharay Masalay ka Salan ( Mutton Stew )


Kharay Masalay ka Salan ( Mutton Stew ) ... A delicious and flavorful Pakistani style mutton stew prepared with onions, tomatoes, yoghurt & whole spices.


Kharay Masalay ka Salan ( Mutton Stew )

Ingredients :
  • 1/2 cup oil
  • 250 gm.  onions, sliced
  • 1/2 kg.  mutton, medium sized cubes
  • 1 tbsp.  ginger, chopped
  • 8 cloves garlic, chopped
  • 1/2 tsp.  fennel seeds ( saunf ), crushed
  • 1 tsp.  cumin seeds
  • 1 tbsp.  coriander seeds, crushed
  • 8 whole dried red chillies ( round / button chillies )
  • 6 black peppercorns
  • 3 cloves
  • 4 black cardamoms
  • 2" stick of cinnamon
  • Salt, to taste 
  • 4 medium tomatoes, chopped  
  • 1/2 cup  yoghurt, whisked
Method : 
  • Heat oil in a pan, add the onions and fry until golden brown.
  • Add mutton and stir-fry for few minutes until the meat changes color.
  • Add ginger, garlic, fennel seeds, cumin seeds, coriander seeds, dried red chillies, black peppers, cloves, cardamoms, cinnamon, salt and tomatoes.
  • Mix well and add enough water ( about 2 cups or as required ) so the meat can tenderize. Cover and let cook on low heat until the meat is tender and the water is almost absorbed.
  • Add yoghurt. Mix well and cook on High heat, stirring continuously until the oil separates.
  • Add ( 1 cup ) hot water and put on low heat for 5 minutes.
  • Serve hot with naan or chapati / roti.
