Almond Biscotti


Almond Biscotti ... Biscotti are twice-baked biscuits of Italian origin. They are oblong-shaped almond biscuits, baked twice to make them dry and crunchy. They are only slightly sweet with a nutty taste and crunchy texture. Biscotti are usually served with hot coffee and espresso drinks. It can be served as a light breakfast, snack or even dessert.

Almond Biscotti

Ingredients :
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 tsp.  almond essence
  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp.  baking powder
  • 1/4 tsp.  salt
  • 3/4 cup almonds, chopped

Method :
  • Preheat oven to 325 F / 160 C. Line a baking sheet with parchment paper.
  • Beat butter in a medium mixing bowl until creamy. Add sugar and beat until fluffy.
  • Add eggs and almond essence; beat until mixture is smooth.
  • Sift flour, baking powder, and salt into egg mixture; beat until just mixed. Stir in almonds.
  • Divide dough in half. On a lightly floured surface, roll each half into a long log ( about 1 1/2 inches wide and 10 inches long ).
  • Place logs on the prepared baking sheet, leaving 3 inches space between each.
  • Bake 25 minutes until lightly browned. Cool 5 minutes.
  • With a serrated knife, cut logs diagonally into ( 1/2 inch thick ) slices. Arrange slices, cut side down, on parchment lined baking sheets.
  • Return to oven; bake for 10 minutes. Flip biscotti over; bake an additional 10 minutes.
  • Cool completely on a wire rack. Store biscotti in an airtight container at room temperature.
