Curried Chicken Pita Wraps
*******************************

Ingredients :

For Chicken :
  • 250 gm.   boneless chicken, small cubes
  • 1/2 cup yogurt
  • 1 tsp.  vinegar
  • 1/2 tsp.  salt
  • 1 tsp.  red chilli powder
  • 1 tsp.  crushed coriander seeds
  • 1 tsp.  ginger garlic paste
  • Orange food color, optional
  • 1 tbsp.  oil
For Salad :
  • 1/4 cup grated carrot
  • 1/4 cup thinly sliced cabbage
  • Mayonnaise, as required
  • Pinch of ground black pepper
Others :
  • 3 - 4 pita bread
  • Ketchup or chili garlic sauce, as required
Method :
  • Combine all ingredients of chicken except oil in a bowl and marinate for at-least half an hour.
  • Heat oil in a pan, add the marinated chicken & cook on medium heat until the water dries and the chicken is cooked. ( This can be made in advance; cool after cooking, cover and refrigerate ).
  • To prepare salad, combine all ingredients together and keep aside.
  • Heat pita bread slightly in a pan, remove and spread ketchup or chili garlic sauce evenly on one side of pita bread.
  • Place cooked chicken evenly in centers of pitas; top with salad.
  • Fold in both sides of each pita to make rolls and wrap in paper.

  25. This is a speedy hassle-free twist on a traditional coronation chicken with extra salad. Instead of mayonnaise, I use low fat or Greek yogurt. Anyways, thanks for this chicken recipe!
