Stir-fried Okra ( Fried Bhindi )


Stir-fried Okra ( Fried Bhindi ) ....  A simple & easy recipe of chopped okra pieces stir fried with onion, tomato & spices.


Stir-fried Okra ( Fried Bhindi )

*  Prep. Time : 20 minutes
*  Cook Time : 25 - 30 minutes
*  Serves : 4

Ingredients :
  • 500 gm. Okra / Ladyfinger ( Bhindi )
  • 1/4 cup oil
  • 125 gm. onion, thinly sliced
  • 1 tsp. cumin seeds
  • 1/8 tsp. nigella seeds ( kalonji )
  • 1/2 tsp. carom seeds ( ajwaiin )
  • 1 to 1 1/2 tbsp. crushed red chilies
  • 1 tbsp. crushed coriander seeds
  • 1 1/2 tsp. salt ( or to taste )
  • 250 gm. tomatoes, halved and thinly sliced
  • 1 small raw mango, peeled & grated
Method :
  • Wash the okra and pat dry with absorbent paper( it should be dry to cut or they will become slimy).
  • Slice of tops and and ends and discard. Slice okra crosswise into 1/2 inch thickness, keep aside.
  • Heat oil in a wok over medium heat and fry onion till soft.
  • Add the okra & cumin seeds; continue frying, stirring gently for another 4 - 5 minutes on High flame.
  • Add all the remaining ingredients.
  • Mix and cook ( uncovered & stirring occasionally ) on low heat for ( 20 - 25 minutes ) till okra is tender & the sticky texture disappears.
  • Fry on medium heat for 2 -3 minutes till it leaves oil.
  • Serve hot with chapati / paratha.

    5. This is one tongue tickling okra curry..love the ingredients especially the addition of nigella and mango.
