Cherry Squares



Cherry Squares ... Delicious buttery crust with cherries & almonds filling! I loved the beautiful pink color of the cherries in it. The crust was just perfect and the filling was little gooey. 
Maybe, this happened because I haven't used dried cherries. Perhaps, I should have dried the cherries completely on a paper towel before using. Anyhow, they were delicious ... a big hit for mummy & me! As soon as they were sliced, we ate two each :)

Cherry Squares

 Recipe adapted from allrecipes

* Prep. Time : 20 minutes
* Cook Time : 45 -50 minutes
* Makes : 16 squares



Ingredients :

Crust :
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, room temperature

Filling :
  • 2/3 cup canned cherries, pitted & chopped
  • 1 cup sugar
  • 2 large eggs, lightly beaten
  • 1/3 cup all-purpose flour
  • 1/2 cup chopped almonds
  • 1/2 tsp. baking powder
  • 1/2 tsp. vanilla extract

Dusting :
  • Confectioners’ sugar, for dusting

Method :
  • Preheat oven to 180 C. Butter an 8" square baking pan, and set aside ( I just used aluminum foil to cover the base & sides of the pan which makes it much easier to remove after baking ).
  • Combine butter, sugar and flour in a food processor, blend until crumbly and combined.
  • Using your hands, pat mixture evenly into the prepared pan to make crust.
  • Bake until firm and slightly golden, about 20 minutes.
  • Transfer to a rack to cool.
  • In a large bowl, mix together the eggs and sugar until well blended.
  • Combine flour and baking powder. Stir into the egg mixture.
  • Mix in vanilla, almonds and cherries.
  • Pour mixture over baked crust.
  • Bake for 25 to 30 minutes in the preheated oven, or until firm. 
  • Let cool on a wire rack.
  • Cut into bars / squares and dust with confectioners' sugar.
