Almond Raisin Tea Time Cupcakes ... These little cakes / cupcakes with almonds and raisins make a delicious treat for teatime.

Almond Raisin Tea Time Cupcakes

Makes : 10 - 12
Ingredients :
- 1/2 cup butter, softened
- 1/2 cup castor sugar
- 3 eggs
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. vanilla essence or 1/4 tsp. almond essence
- 1/4 cup milk
- 1/4 cup raisins or sultanas
- 1/4 cup almonds, chopped
- Soak raisins in little warm water for 10 -15 minutes. Drain and pat dry with paper towels.
- Preheat the oven to 180 C. Lightly grease or line muffin cups.
- Beat butter and sugar in a large bowl until creamy.
- Beat in eggs, one at a time, beating well after each addition until light and fluffy.
- Add essence; beat well.
- Stir together flour and baking powder in a separate bowl; gradually mix into butter mixture.
- Add milk; stir until well combined. Stir in raisins and almonds.
- Divide batter evenly into muffin cups.
- Bake 18 to 20 minutes or until wooden pick inserted in center comes out clean.
- Cool 5 minutes; remove from pan to wire rack. Cool completely.

ReplyDeleteJust to let you know that I made almond rusk yesterday. I had been making gluten free biscotti from last few years but never made rusk with all purpose flour. So for a change my husband was happy that I made something for him.
