Rasmalai or Ras Malai ( Powdered Milk Balls In Sweetened Milk )


Rasmalai or Ras Malai ( Powdered Milk Balls In Sweetened Milk ) ... Rasmalai, a sweet milk dessert, is popular throughout South Asia. It is usually made with Paneer ( fresh cheese ), shaped into flattened balls and cooked in a thickened milk. Here's an easy and quick Rasmalai recipe, made with powdered milk. Soft and light balls with milk syrup and flavored with cardamom and pistachios.


Rasmalai ( Powdered Milk Balls In Sweetened Milk )

Serves : 6

Ingredients :

For Milk :
  • 1 liter / 4 cups milk
  • 1/2 cup sugar
  • 1 pinch cardamom powder
  • 1/4 tsp.  Kewra water
  • 2 tbsp.  pistachios, finely sliced
For Balls :
  • 1 cup powdered milk ( Nestle Nido or any full fat powdered milk )
  • 1 level tbsp.  plain flour
  • 1 tsp.  baking powder
  • 1 pinch cardamom powder
  • 1 tbsp.  oil or ghee, melted
  • 1 egg, beaten
Method :
  • Boil the milk with sugar and cardamom powder in a pan over medium heat.
  • Meanwhile, mix the powder milk, plain flour, baking powder, cardamom powder and oil in a bowl. Mix gently with hands.
  • Gradually add the beaten egg, a little at a time and mix till it forms a ball shape. ( Just add enough egg that the mixture comes together ).
  • Knead lightly to make a smooth dough. Don't knead too much.
  • Make equal sized, small, oval or round shape balls with a light hand and flatten them slightly.
  • Place the balls, one by one into the milk.
  • Cover the pan and cook on medium-high heat until the milk comes to a boil and the balls start to increase in size.
  • Reduce the heat to low and simmer for few minutes until the balls are soft and light.
  • Turn off the heat and add the kewra water.
  • Transfer to a serving dish, sprinkle pistachios.
  • Let it cool slightly at room temperature, then refrigerate until serving.

    We used to get something similar to this at a Church in Trivandrum at the end of their feast Mass. Looks good... And easy to make too.. wow!

  38. I made this today with instant milk powder as I didn't have full cream milk powder, all the balls broke down as soon as heated in the milk.
    Can you tell me please the reason?
    Is it because of the milk powder?

    1. Kimi, sorry to hear that! Maybe you added more baking powder than required. It should be a level teaspoon. Also, don't stir the balls after adding to the milk. When they start to swell up, reduce the heat and cook on low heat. Hope this helps!

    1. I'm sorry to hear that, Anie! Try reducing the amount of baking powder. When the balls start to swell up ( after adding to the milk ), reduce the heat and let them cook on low heat. Hope this works!
