Peanut Brittle Cookie Sticks ... If you love peanut brittle candy, try these delicious cookie sticks. Take a bite and enjoy your favorite peanut brittle flavor with the combination of chocolate chips.
Peanut Brittle Cookie Sticks
Source : Land O LakesMakes : 48 cookie sticks
Ingredients :
- 3/4 cup butter, softened
- 3/4 cup firmly packed brown sugar
- 1 tbsp. vanilla ( I used 1 1/2 tsp. )
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 1 cup salted peanuts, coarsely chopped
- 1/2 cup milk chocolate toffee bits ( I used mini chocolate chips )
Method :
- Preheat oven to 180 C. Line a 13" x 9" pan with greaseproof paper.
- Combine butter, sugar and vanilla in a large bowl. Beat at medium speed until creamy.
- Reduce speed to low; add flour and salt. Beat until well mixed. Stir in peanuts.
- Press dough onto bottom of prepared pan to make a smooth layer. Sprinkle evenly with toffee bits / chocolate chips.
- Bake for 15 to 25 minutes or until edges are golden brown.
- Remove from the oven and let cool in the pan for 10 minutes, then cut into bars. They will be soft in the center but will firm up when completely cooled.
