Kairi Ka Sharbat ( Raw Mango Squash )


Kairi Ka Sharbat ( Raw Mango Squash ) ... A delicious & refreshing fruit squash made of unripe / raw mangoes, water and sugar. This drink is very effective to prevent from heat and sunstroke. Perfect thirst quencher for hot summer days!

Kairi Ka Sharbat ( Raw Mango Squash )

Ingredients :
  • 1 kg.  unripe / raw mangoes
  • 2 litres water
  • 1 kg.  sugar
  • 1 - 2 lemons
  • Pinch of black salt ( kala namak )
  • Mint leaves, optional, for garnishing
Method:
  • Wash, peel the skin and remove the seeds of unripe mangoes. Cut into small pieces.
  • In a stainless steel pan, combine raw mangoes with enough water to reach ( approx.  2" ) above the mango cubes.
  • Boil on low heat until soft. Remove from heat and let them cool down.
  • Now blend this mixture in a blender.
  • Boil remaining water. Add sugar and the blended mango pulp; cook on medium heat until the sugar dissolves.
  • Remove & let it cool completely. Then add lemon juice and black salt, according to taste.
  • Fill the squash in sterilized bottles and keep it in the fridge.
  • To serve it, pour ( 2 - 3 tablespoons ) of this squash in a glass. Add cold water and ice cubes, mix. Sprinkle with black salt and garnish with few mint leaves.
  • Serve cold and enjoy.
Note: 
  • You can also make it with slightly ripe green mango.
  • Unripe green mango squash has a sweet and sour taste and its color is light green. While slightly ripe green mango squash will give a sweet taste and its color will be light yellow.
