Chocolate Dipped Date And Coconut Balls ... These simple treats are made by stuffing dates with nuts, coating with a coconut mixture, dipping in melted chocolate and topping with coconut or nuts. Lots of flavors and textures ... Pure heaven for a sweet-tooth fanatic!
Chocolate Dipped Date And Coconut Balls

Source : Chef RahatIngredients :
- 1/4 cup butter
- 1 cup Icing sugar
- 1 cup desiccated coconut
- 3 to 4 tbsp. cream
- 20 - 24 whole dates, soft
- 20 - 24 whole almonds
- 1/2 cup chocolate, chopped
- Extra desiccated coconut or nuts, for topping
Method :
- Melt butter in a medium saucepan over low heat. Stir in Icing sugar.
- Add coconut and cream; cook, stirring frequently until it can be rolled into a ball.
- Remove from heat and allow the mixture to cool until easy to handle.
- Cut a slit into each date. Remove the pits and replace with an almond.
- Divide the coconut mixture into 20 to 24 portions.
- Press each portion between the palms of your hands to form a patty.
- Place one date in the center, fold the edges up and around the date to completely cover it. Make a smooth ball.
- Repeat with the remaining mixture and dates.
- Place balls on paper lined baking trays and refrigerate / freeze until firm.
- Melt chocolate in a double-boiler, stirring constantly till the chocolate begins to melt.
- Dip each ball into melted chocolate, using a fork, turning to completely coat; tap off excess chocolate.
- Place on paper lined baking trays. Sprinkle desiccated coconut on top.
- Refrigerate or freeze until set.
- Place in paper cups and refrigerate again until serving.
Notes :
- You can replace whole almonds with chopped nuts.
- Dates should be dried well before coating or it will not hold the coating.
- When dipping in melted chocolate, take out only few balls at a time from the freezer to keep the balls from getting soft.
