Sharbat-e-Falsa (Grewia Juice)


Sharbat or Sherbet  is a popular Middle Eastern and South Asian drink that is prepared from fruits or flower petals. It is sweet and served chilled. It can be served in concentrate form and eaten with a spoon or diluted with water to create the drink. Rose, Sandalwood, Lemon, Orange, Pineapple, Mango & Falsa sharbats are very common in Pakistan.

Falsa / Phalsa ( Grewia asiatica ) is a species of Grewia native to southern Asia from Pakistan east to Cambodia, and widely cultivated in other tropical countries. The fruit is an edible drupe 5–12 mm diameter, purple to black when ripe. It is extensively cultivated for its sweet and sour acidic fruits, which are sold in the market during summer months under the name Falsa. The pleasant sherbet or squash is prepared from the fruit pulp by mixing it with sugar and used as an astringent, stomachic and cooling agent. The fruits allay thirst and burning sensations, and can reduce inflammations. These are said to be good for heart and blood disorders, fevers, throat troubles and diarrhea. ( Source: Wikipedia )

Sharbat-e-Falsa (Grewia Juice)

* Serves : 6

Ingredients :
  • 250 gm. falsay (washed)
  • 250 gm. sugar ( adjust according to the taste, depending on the sourness of the fruit )
  • Pinch of black salt ( kala namak )
  • 1 1/2 liter water
Method :
  • Wash & soak the falsay in 1 cup water for ( 1 - 2 hours ) to soften the fruit.
  • Strain through a medium fine sieve and extract all juice and pulp by pressing down with a spoon. Discard the seeds.
  • Combine sugar & remaining water in a pan. Cook till the sugar dissolves.
  • Remove from heat, add falsa juice and black salt.
  • Cool at room temperature, then refrigerate until well chilled.
  • Serve in tall glasses, topped with Ice cubes.
Note : 
  • It should be consumed within 2 days, as there are no preservatives added in this sharbat. You can also add red food color to get the beautiful color.

    sweet Ambreen i like falsa but its rare in Islamabad..my sis lived in Lahore & she said its available easily there :)

  10. its been ages that I tasted this fruit. we used to have one tree at our backyard but then we had to cut it. since then its been a distant dream. you revived many fond memories with this post Ambreen. lovely post.

    i never know how to make aa sherbet recipe. and you have unfamiliar ingredients such as falsay.

  26. Oh my, I haven't had this fruit in ages! We have this in South Indian, in Kerala, where I come from. It is called njaval pazham in Malayalam. But I never knew of making sharbat with this fruit, we usually snack on it, and it's my hubby's favorite :) Would so love to taste this sharbat, ah!
